Fish Taco's

I was so against fish taco's to me it just sounds gross. But I found a recipe and started making them and just love them.

Here is my recipe sorry it is kind of a by memory recipe.

White Fish, I have used Flounder and Tilapia
Cabbage
Veggies of your choice
Corn Tortillas
Ranch Dressing
Rice on the side

I put the fish in rice in my rice cooker and it cooks in about 25 minutes and is so good. Season the Fish with Blacken Seasoning. I would saute the veggies separately. As for the Ranch dressing I make it with 1/2 cup light mayo and 1/2 cup greek yogurt, onion powder, garlic powder, parsley, pepper. This makes a really good little sauce. When the fish and everything is cooked put inside warm corn tortillas.

Loose Meat Sandwich

I can't take credit for this recipe at all I got it off of another website.

Loose Meat Sandwich The Blue Mill Tavern

I must say I served this with oven baked fries and though I am certain this doesn't qualify as a healthy meal it was delicious anyway. And here are the directions for those of you that won't click on that link...I know how ya are :)

Ingredients:

Servings: 4-5

* 1 lb of real good ground chuck or 1 lb ground beef round or 1 lb ground sirloin
* 1 tablespoon fat like lard (if meat is round or sirloin) or 1 tablespoon Crisco (if meat is round or sirloin)
* 2 teaspoons salt, just enough to lightly cover bottom of your skillet
* 1 onion, chopped fine
* 1 tablespoon prepared yellow mustard
* 1 tablespoon vinegar
* 1 tablespoon sugar
* water, to cover
* salt and pepper, to taste


Directions:

Prep Time: 10 mins

Total Time: 30 mins

1.Get out a cast iron skillet-they are the best for loose meats-or other kind if you have no iron skillet.
2. Melt fat over medium heat and lightly salt bottom of skillet.
3. Break ground beef up in skillet and start crumbling it with the back of a wooden spoon-this is very important-the meat must end up being cooked up into small crumbles.
4. Add chopped onion while browning meat.
5. Keep working with the back of spoon to break up meat.
6. When meat is browned, drain off any fat and return meat to skillet.
7. Add mustard, vinegar, sugar, and just enough water to barely cover meat in the pan.
8. Cook, at a simmer, till water is all cooked out-between 15-20 minutes.
9. Adjust salt and pepper to taste.
10. Heat your hamburger buns-they're traditionally steamed for loose meats-I like mine toasted lightly-do it the way you like it.
11. When buns are warm, put yellow mustard on them and add some dill pickle slices-I put on lots!
12. *If you start changing this recipe and using things like olive oil for the fat and Dijon or honey mustard for the yellow mustard, you will not get the traditional yummy taste of a loose meat sandwich.
13. Likewise, don't add any liquid smoke or Worcestershire sauce.
14. Make them just like this the first time so you can sample the simplicity of this famous Midwestern treat.
15. If you want to start making changes after that by all means do so but I'd like you to taste the original recipe at least once.

Salisbury Meatballs

I was looking for a twist on Salisbury Steak, I was unable to find a recipe that had ingredients I had on hand. So here is my version.


1 pound ground beef or ground turkey
1/4 cup bread crumbs
1/4 cup chopped onions or 1 tsp. Onion Powder
2 Tbsp Soy Sauce
1 can Mushroom soup
Salt and Pepper to taste

Most recipes will call for French Onion soup which I did not have on hand. So I improvised. First if your going to use onions saute them in a small amount of oil on the stove top. If not just add your onion powder to the breadcrumbs. Add ground meat to the bread crumbs and mix together well. Roll meat into balls and place in pan. Cook until brown. Add the soy sauce and allow meat to simmer for about 5 minutes. Add mushroom soup and 1 can of water. Combine mixture of soup and water. Let soup and meat simmer for about 25 minutes. Keep an eye on them so they don't burn.

This is great over a bit of noodles.
